We Eat: Lunch

Hey guys! I've got another installment for you, I'm calling it 'We Eat' because well...I'm going to share recipes with you!  I've started making a meal plan every week to save money on groceries and so that we don't come home and wonder what in the world we are going to have.

Today I'm sharing Pesto Pasta Salad with Beer Bread


Pesto Pasta Salad with Broccoli and Cherry Tomatos (From Flat Belly Diet Cookbook)

4 ounces rotini pasta (I actually never measure pasta, I just make whatever I feel like!)
2 cups broccoli florets 1 cup grape tomatoes, halved
1/4 red onion, thinly sliced (about 1/4 cup)
1/4 cup packed fresh basil, thinly sliced
1/4 cup Pesto
2 Tablespoons olive oil

Instructions:
1. Bring a large pot of water to boil, and add pasta. Cook according to directions on package. Once it's done, drain and rinse the pasta and transfer to large bowl
2. Add the tomatoes, onion, and basil to the pasta. Combine pesto and oil in a separate bowl. Stir the pesto mixture into the pasta and toss well. Serve right away or refrigerate until ready to serve cold.

I will admit-our beer bread is from a pre-packaged mix that only required adding a can of beer and then baking, but I found a great recipe on Pasty Affair

  2. Oh my, this looks heavenly! I am a diehard pasta lover so I am always looking for new recipes. Definitely bookmarking this one. I haven't had beer bread in forever either.
