Banana Pancakes

One of my favorites Saturday morning treats is pancakes!!! I spent some time last year experimenting with different pancake flavors (which I will continue to show you!) But banana pancakes is still my go-to flavor :)


What you need:
2 Cups Milk
1/4 Vegetable Oil
2 Tbsp. Honey
2 Tsp. Lemon Juice
1 Tsp. Vanilla Extract

2 Cups Flour (I did 1 cup regular, 1 cup whole wheat)
1 Tbsp. Baking Powder
1/2 Tsp. Baking Soda
1/4 Tsp. Salt
1 or 2 bananas, mashed


Instructions: Measure out all the liquid ingredients into a measuring cup. Set aside, and in a large bowl sift together the dry ingredients. Then pour the wet into the dry and mix well. Once the batter is mixed, you can add the mashed banana(s), and I like to add peanut butter chips or chocolate chips but we had neither! (Peanut butter chip banana pancakes are the BEST!) I use a muffin batter sized scoop to make this size of pancake, it's pretty perfect. Let the batter sit until it is bubbling on the edges, then flip and brown on the other side.


Slather with peanut butter (If you forgot to get peanut butter chips like me!) and syrup!
